You may not have eaten Flat Iron steaks growing up. It's a relatively new cut. In the past butchers would grind it into the burger. But now butchers have learned to cut it, and thank goodness. It's from the chuck area, and from our grass fed animals it has fantastic flavor. It can be tough, but if cooked properly it isn't. Spruce Eats has some good information and a grill recipe. We like it pan fried, too. A ciabatta roll, and that's a sandwich.
